Tangy Glazed Meatloaf with Garlic Parmesan Potatoes

A firm, sticky-glazed meatloaf and crispy garlic-Parmesan potatoes — one dinner, timed to land on the table together.

Serves: 3–4. About 1 hour, mostly hands-off while the loaf bakes.

Make the meal together: Start the meatloaf first. Begin the skillet potatoes about 20–25 minutes before you plan to serve. Finish the potatoes while the meatloaf rests, then serve immediately.

Tangy Glazed Meatloaf

Oven: 375°F. 1 pound ground beef.

Meatloaf ingredients

  • 1 lb ground beef
  • 1 egg
  • 1/2 cup finely crushed crackers
  • 2 tbsp milk, only as needed
  • 3 tbsp dry French onion soup mix
  • 3 tbsp ketchup
  • 1 tsp mustard
  • 2 tsp apple cider vinegar (or white vinegar)
  • 1 tbsp brown sugar, optional

Thick glaze

  • 1/3 cup ketchup
  • 1 1/2 tbsp brown sugar
  • 1 tsp mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp Worcestershire sauce, optional
  1. Heat oven to 375°F. Line a rimmed metal baking sheet with lightly greased foil. For crisper sides, shape a free-standing loaf instead of using a deep loaf pan.
  2. Gently combine the beef, egg, cracker crumbs, soup mix, ketchup, mustard, vinegar and optional sugar. Add milk only if the mixture seems dry, up to 2 tbsp. Let stand 5 minutes. It should hold its shape; if loose, add 1–2 tbsp more crumbs.
  3. Shape into a loaf about 7 x 4 inches and 2 inches tall. Bake uncovered. Begin checking the center temperature after 30 minutes; total time is often 40–55 minutes, depending on shape and oven.
  4. Mix the glaze. For an extra-thick consistency, simmer it gently in a small saucepan for 3–5 minutes, stirring frequently.
  5. During the last 10–15 minutes of baking, spoon off pooled surface juices and brush on a thin layer of glaze. Bake 5 minutes, then add a second thin coat. Continue until the center reaches 160°F; temperature, not time, determines doneness.
  6. Optional: broil 1–2 minutes for a sticky browned top, watching constantly. Rest 10–15 minutes before slicing. Do not rely on resting to bring an undercooked loaf to 160°F.

Texture tip: Do not pour on all the glaze at once. Avoid extra milk or vinegar, and do not add extra salt before accounting for the soup mix and crackers.

Garlic-Parmesan Fried Potatoes

Serves 3–4 as a side. 1 pound mini red potatoes.

Potato ingredients

  • 1 lb mini red potatoes, cut into 1/2-inch pieces
  • 2 tbsp cooking oil, such as grapeseed or vegetable oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Small pinch of salt, optional
  • 2–3 tbsp garlic-Parmesan wing sauce
  • Grated Parmesan, optional
  1. Put the cut potatoes in a microwave-safe bowl with 1 tbsp water. Cover with a vented microwave-safe lid and microwave 4–5 minutes, until slightly tender. Carefully release steam, drain and pat very dry.
  2. Heat the oil in a large skillet over medium-high heat. Add the potatoes in one layer; work in batches if necessary. Sprinkle with the garlic powder, onion powder, paprika, pepper and a little salt.
  3. Leave untouched for 4–5 minutes to build a crust. Flip and cook another 8–10 minutes, turning occasionally, until browned and fork-tender. Reduce heat if the seasoning starts to burn.
  4. Turn heat to low. Toss with 2 tbsp garlic-Parmesan wing sauce for 30–60 seconds, just until coated and warmed. Add the remaining tablespoon only if needed. Finish with Parmesan, if desired.

Crispness tip: Keep the skillet uncovered and add sauce only at the end. A light coating stays crispier than a heavy pour; serve extra sauce on the side.

Air-fryer option: Use 1 tbsp oil instead of 2. Toss raw, thoroughly dried potato pieces with oil and seasonings. Air-fry at 390°F for about 15–20 minutes, shaking halfway, until browned and tender. Toss lightly with wing sauce, then air-fry another 1–2 minutes, watching for scorching. Do not microwave first for this method.
