Stack of pancakes with butter, syrup, and sprinkles

From-Scratch Pancakes

From scratch because it’s easy — and you know exactly what’s in them. One bowl for dry, one for wet, lumps and all.

Serves 4. About 20 minutes.

Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • Pinch of salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla (optional but yummy)

Steps

  1. Mix dry stuff. In a bowl, whisk flour, sugar, baking powder, and salt.
  2. Mix wet stuff. In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine. Pour wet into dry and mix just until combined. (Lumpy is GOOD.)
  4. Cook. Heat a pan on medium, lightly butter it. Scoop 1/4 cup batter for each pancake. Cook until bubbles form, flip, cook until golden.

Make Them Your Way

  • Chocolate chip: fold 1/4 cup chocolate chips into the batter right before cooking.
